We know that we should make chicken noodle soup when we are sick. Chris Morocco, from Bon Appetit, makes a pot of garlic broth instead. I tried his recipe and fell in love with it. It’s so simple and actually helps with a cold. It consists of only 6 ingredients that you usually have in your fridge. No one wants to run to the store when they feel like they are dying, right? This recipe is delicious, soothing, and easy. It truly helped me get over a cold.

Ingredients:

  • 2 Tbsp. of extra-virgin olive oil
  • 1 head of peeled, cracked garlic cloves
  • Hand full of herbs – parsley, cilantro, sage, scallions
  • Salt and pepper
  • Additions: noodles or egg if you want.

Steps:

#1 In a large saucepan, heat 2 Tbsp. of extra-virgin olive oil over medium heat.

#2 Add a head’s worth of peeled cracked garlic cloves and cook while stirring until they are golden brown for about 8-10 minutes.

#3 Add 2 quart’s of water and bring to a simmer.

#4 Grab a handful of herbs – parsley, cilantro, sage, and scallions and add to the pot along with 1 more head of garlic, halved crosswise.

#5 Gently boil until broth is reduced by a quarter and garlic is super soft. 30-40 minutes.

#6 Season with salt and pepper.

#7 Strain the broth to remove garlic and herbs.

#8 You can add noodles if you want or a whisked egg or just sip as is.
